Turn off both Hot wires.
Not necessary, since turning off 1 hot wire works fine.
Always use wiring diagram that comes with device.
Advantage of double pole: A double-pole switch acts as a 'safety switch' to ensure power is completely off when working on water heater.
Safety switch or power cut off is required for HVAC, or tankless electric heater when breaker box is not within sight. Commercial water heater installations usually require safety switch.

Use 240Volt during times when electric prices are lower, and faster recovery is needed. Use 120Volt during peak prices when less hot water is used
Bring 120Volt from nearby outlet that has 12 gauge wire, or install lower watt elements if wire is only 14 gauge.

Using 30 amp Double Pole Double Throw switch
Ordinary 3-way switch will do same job, but without center off

Connect 120Volt wires as Hot and Neutral. Black connects to 120Volt circuit breaker and White connects to neutral busbar.
Connect 240Volt wires as Hot1 and Hot2. Both wires connect to 240Volt breaker.

30-Amp 120-240-volt Two-Pole Indoor Safety Switch with Neutral/ fusable

Use fusable or non-fusable safety switch. When using fusable, select same amp rating as load. Non-fusable, do not use less than amp-rating of Load, but you can install 60 amp non-fusable on 30 amp Load.
Safety switch operates same as ordinary on-off switch: up for ON, down for OFF. Single-pole only. Not available for 3-way operations.

Having more than one fuse, or circuit breaker, on same line is ok by code and will not affect load, wires, or cause problems.

Same wiring for either 120 or 240 volt loads

Objective 1: Either the dishwasher has power or the under-counter water heater has power. But neither at same time.

Objective 2: inexpensive, reliable solution that doesn't require much space and is simple to wire, simple to program and handles job with no chance for error.

How to wire: Incoming wire from breaker has 2 wires. If voltage is 120, then the white Neutral wire is never switched on-off. Connect white Neutral wire to each appliance.
Black Hot wire is switched on-off. Connect Hot wire to COM terminal on the 3-way switch (dark or different color screw). Then run a Hot wire to each appliance from the other two screws on switched.
