Calibration: all mechanical thermostats are calibrated approximately.
Actual shut off temperature can vary by +10°F or -10°F

The temperature in lower part of tank can drop by 15-25° before heat turns on, but upper part of tank will still be hot.
Tank should deliver 70% of tank volume before usable (104°) water runs out.

Water heating rule-of-thumb allows 15-25° drop in temp before thermostat is considered out-of-calibration....

You can replace ELECTRIC thermostats using a different brand
